The definitive bourbon barrel aged imperial stout, BCS comes at you with its classic flavors of vanilla, bourbon, coffee and chocolate with sweetly integrated and under-appreciated oak.
Of much more consistent durability than its pastry stout descendants, the beer handles aging well for up to 10 years, although it hits a real sweet spot between years 4 to 6. As time goes on the roast shows a surprising durability, but it starts to get a little bit weak in body around years 9 and 10.
When young, it hits the palate with a bracing assault of citrus and pine. As time goes on the intensity fades and the caramel and sherry characters come into play, though the beer is dominated by hoppy intensity and should beg enjoyed as such.
5 years. The real sweet spot is around years 2-3 when the hop assault fades just a little bit, allowed some of the sweet sherry and maderized notes through. After age five the hops fade and the core idea of the beer is lost, though it will still hold up well for some time.
Tastes of grass, hay, and the soul of the lands surrounding it. Clean grain, moderate spice gently integrated along with honey when the beer is young. As time goes on the spice and clove notes become more tropical and the malt becomes more honeyed.
5-7 years. The beer really hits a peak around age 6 in terms of added honey-like sweetness counterbalanced by spice, but past age 7 the profile begins to drift towards a slightly unbalanced and overly sweet character due to oxidation. Years 3-4 are also very nice as the beer has fully integrated the spice components of the yeast.

Don’t let the name scare you away, it’s a beer that’s called ‘Santa Claus’. The ultimate winter warmer German Eisbock. This is not technically a true Eisbock (which would mean that it is freeze-concentrated. ‘Eis’=Ice) but rather a really strong doppelbock. Incredibly smooth from a very long and very cool lagering period, it is an incredible example of what can be done within the bounds of Reinheitsgebot:
